Pappardelle Pasta with Smoked Exotic Mushroom & Sage Soubise
This rich & smokey-flavored pasta dish is perfect on a nice cool fall night.

Ingredients
1 pound pappardelle pasta
2 pounds exotic mushrooms
1 quart heavy cream
6 eachs Shallots-chopped
1 clove Fresh Garlic
1 each B&b charcoal
1 bunch sage
Directions
For the sauce
Sweat shallots in butter till translucent add heavy cream and sage. Bring to a simmer for 5 min then take it off the heat. Let cool and then blend it up.
For the mushrooms
Toss exotic mushrooms in a little oil and salt & pepper. Place on the smoker for 15 min at 270* remove and set aside.
Pasta
Boil pasta for about 8 min till soft with a bite & strain pasta.
Plating
In a sauté pan. Place mushrooms, Sage soubise sauce, and add in the pasta. Mix so it is consistent all the way through. Take tongs and spiral past into a bowl adding mushrooms in as well.
Top with some parmigiana cheese and fresh sage.
Enjoy with a nice glass of Pinot Noir.
