Nashville Hot Fried Chicken Sandwich

Ingredients
6 ounces chicken breasts
3 cups clam fry
1 bottle Chef Dan’s BBQ Dry Rub
1 bottle Chef Dan’s Honey Hot Sauce
1 bag coleslaw mix dry
1 each jalapeno chiles
1 bunch cilantro
2 cups rice wine vinegar
1 bottle Chef Dan’s Cajun Seasoning
2 slices Cheddar cheese
1 jar dill pickle
1 each hamburger bun
1 cup sugar
Directions
For the Slaw
Mix together the rice wine vinegar, sugar, cilantro, two pinches of Chef Dan’s Cajun seasoning. Add in your slaw mix to the liquid mix and mix together. Set aside to allow the liquid to get absorbed into the cabbage mix.
Fry the chicken
Mix clam fry and 3 pinches of Chef Dan’s BBQ seasoning together. Dredge the chicken in the flour mix. In a sauté pan add 2 cups of canola oil and heat to medium high.
Once the oil is hot carefully place the chicken in the pan (you don’t want hot oil to splatter on you). Cook on one side for 5 min then flip the chicken breast for another 5 min. You want to temp the chicken to 165. If it is under temp, place it in the oven to finish.
Assemble the sandwich
Place your cooked fried chicken in a bowl and toss with some of your honey hot sauce. Then place it on a pan. Dust it with Chef Dan’s BBQ seasoning. Place your fried chicken on a pan and melt your cheese.
If desired, toast your bun (optional- I would toast mine with a little butter on a sauté pan).
Place your chicken on the bottom of the sandwich bun and then top your chicken breast with 1/2 cup of slaw mix.
Place 3 sliced pickle chips on top
Drizzle a little of the Honey Hot Sauce on top
Place top bun on and place a toothpick with 2 pickle chips on it to hold the sandwich in place.
Now the fun part, try the sandwich and enjoy all the flavors.
